Ray, who is of Chinese origin, with 20 years experience in high end hospitality venues has achieved the acclaimed status of “Sushi Master “ and brings his amazing Sushi and kitchen skills to Yema.
Working over many, many years as Head Sushi Chef at Maze & Zuma in London and Pirata in Hong Kong and also as Senior Sushi Chef for over 5 years in Novikov, Mayfair with a sushi team of 8 delivering premium dishes.
His fantastic skills extend to Sichuan and Fusion cuisine and Japanese fine dining creations.
He will be introducing different menu’s every week and building his talented team in the Yema kitchen for our Small Plates menu, Summer Garden menu, Sushi selection and the incredibly popular “Yema experience menu”.
